Is guest checkout worth offering?
Yes, for almost every store. Forcing account creation before purchase adds a step that serves you rather than the buyer, and first-time visitors are the ones most likely to abandon at it. Offer the account after the order is placed, when you can show what it is for.

What is actually happening
An account is valuable to you and a cost to the buyer. At the moment of purchase the buyer has decided to give you money, not to enter a relationship, and asking for both at once means the smaller decision can block the larger one.
The account is also easier to sell later. After the order, you can offer it as a way to track the delivery, reorder, or save an address, which are all concrete benefits tied to something that just happened. Before the order, an account is an abstract obligation with no visible return.
Most of what you wanted from the account you already have from the order: an email address, a shipping address, and a purchase history. Creating the record without requiring a password is a technical decision, not a customer-facing one.
The exceptions
Subscriptions, regulated products and anything with an ongoing service relationship genuinely need an account, and buyers expect it. Business buyers with purchase histories and saved billing details also tend to prefer accounts. The test is whether the account exists for the buyer's benefit or for your convenience.
